Eggplant layered with tomato sauce, béchamel, Parmesan cheese and then baked. Served with angel hair pasta tossed in olive oil and garlic

Wednesday – Smoked Steelhead $24

Steelhead salmon fillet smoked with honey, served with a fennel, red onion, orange salad and Jasmine rice

Thursday – Prime Rib $29.95/$49.95

Arid Club classic prime rib served with baked potato and seasonal vegetables

Friday – Coconut Salmon $25

New Zealand king salmon crusted with coconut and baked, served with rice pilaf, vegetable of the day and a huckleberry horseradish sauce
